Zucchini Roll

Preparation
- Preheat your oven to 180°C (356°F).
- Slice the zucchinis thinly (about 2mm) lengthwise and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes.
- Add the ground beef to the skillet, seasoning with salt and pepper. Cook until browned, breaking it apart as you stir.
Cooking
- Stir in the tomato puree, chopped parsley, and paprika. Reduce heat, cover, and let simmer for about 20 minutes.
- Lay out the zucchini slices and season with salt and pepper. Spread the beef mixture over each slice.
- Sprinkle grated mozzarella, Parmesan, and minced garlic over the beef on each slice.
- Roll each zucchini slice tightly and place seam-side down in a baking dish.
- Top with slices of mozzarella fior di latte and drizzle with olive oil.
- Bake for about 30 minutes, or until zucchinis are tender and cheese is melted and bubbly.

- Serve hot and enjoy the delightful blend of flavors in your zucchini rolls!
Notes
If your zucchinis are watery, sprinkle with salt and let sit for 10 minutes to draw out moisture. Mix in sautéed mushrooms or spinach for added flavor and nutrients.
