Ingredients

  Vegetables

Cheese and Egg Mixture

Method

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Grate the zucchini and carrot together. Sprinkle the mixture with 1 teaspoon of salt and let it sit for about 20 minutes.
  3. After 20 minutes, drain excess water from the vegetables using a clean kitchen towel or cheesecloth.
Mixing
  1. In a separate bowl, whisk the egg and mix it with the grated mozzarella, cottage cheese, and black pepper. Adjust salt if needed.
  2. In the prepared baking dish, drizzle olive oil to coat the bottom. Spread the drained zucchini and carrot mixture evenly in the dish.
  3. Pour the egg and cheese mixture over these vegetables, ensuring even coverage.
Baking
  1. Sprinkle the grated parmesan cheese generously over the top of the casserole.
  2. Place the dish in the preheated oven and bake for approximately 25 minutes, or until the top is golden and the casserole is set.
  3. Allow to cool for a few minutes before serving.

Notes

This dish is easy to prepare and reheats beautifully. Consider adding proteins or spices to customize it.
