Ingredients

Vegetables

  • 600 grams white cabbage, shredded

Pasta
  • 500 grams potato gnocchi Fresh gnocchi is preferred for its texture, but store-bought frozen varieties will also work.
Garnish
  • to taste fresh parsley, for garnish
Liquid
  • 1.5 liters water About 6 cups.

Method

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced carrots and sauté for about 1-2 minutes until they start to soften.
  3. Stir in the chopped onion and continue to cook for another 1-2 minutes until the onion becomes translucent.
  4. Add the sliced celery and chopped bell pepper. Cook for another 1-2 minutes, allowing the vegetables to meld.
  5. Incorporate the minced garlic, mixed peppers, and a pinch of salt. Stir well and cook for another minute until fragrant.
  6. Mix in the tomato paste, giving it a good stir to combine, and cook for about a minute more.
  7. Pour in 1.5 liters of water and bring the mixture to a gentle boil.
Cooking
  1. Add the shredded white cabbage and let it simmer for about 5 minutes until it begins to soften.
  2. Gently drop in the chopped tomato and potato gnocchi, cooking for an additional 5 minutes until the gnocchi is tender and heated through.
  3. Before serving, garnish with freshly chopped parsley for a burst of freshness.

Notes

For an extra flavor boost, try adding a bay leaf while simmering the soup and remove it before serving. Fresh herbs like thyme or basil can enhance the soup’s flavor even more—just stir them in at the end. This soup pairs wonderfully with crusty bread or a simple green salad. Store any leftovers in an airtight container in the refrigerator for up to 3 days. If you plan to keep it longer, consider freezing the soup. Just be mindful that the texture of the gnocchi might change upon reheating. To reheat, simply warm the soup in a pot over medium heat until heated through. If desired, add a splash of water or broth to loosen it up.
