Turkish Minced Meat Kebabs

Ingredients

For the Kebabs
  • 1.76 lbs minced meat (beef or lamb) Choose high-quality minced meat for best flavor.
  • 1 large egg Acts as a binder to hold the kebab mixture together.
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs Helps with texture; can substitute with ground oats or gluten-free breadcrumbs.
  • to taste Salt
  • to taste Freshly ground black pepper
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili flakes
  • 1 medium onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 6 pieces wooden skewers Soaked in water for at least 30 minutes.
For the Dipping Sauce
  • 1/3 cup ketchup
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon herbes de Provence Or a blend of dried herbs.

Method

 

Preparation
  1. In a large mixing bowl, combine the minced meat, egg, minced garlic, breadcrumbs, salt, black pepper, coriander, smoked paprika, and chili flakes. Mix well with your hands until fully incorporated.
  2. Finely chop the onion and bell pepper. Heat olive oil in a pan over medium heat. Sauté the onion and bell pepper until soft and fragrant, about 5-7 minutes. Let cool slightly before adding to the meat mixture.
  3. Add the sautéed vegetables and fresh parsley to the meat mixture. Combine thoroughly, then cover and let the mixture rest in the refrigerator for at least 2 hours (or up to overnight) to enhance the flavors.
Cooking
  1. Preheat your oven to 400°F (200°C). Divide the seasoned meat mixture into six equal portions, shaping each around a soaked skewer, ensuring they hold together well.
  2. Arrange the kebabs on a baking tray lined with parchment paper. Bake for about 25-30 minutes or until fully cooked and browned on the outside.
  3. While the kebabs are baking, prepare the dipping sauce: In a small bowl, mix together the ketchup, soy sauce, olive oil, and herbes de Provence. Set aside.
  4. Serve the kebabs hot with the sauce on the side.

Notes

These kebabs are delightful served with lavash bread, tabbouleh salad, or grilled vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days.
