Blueberry, Lemon, Coconut Cake Ingredients
  • 1/2 ripe banana 1/2 ripe banana
  • 1 large egg 1 large egg
  • 100 g 100g Greek yogurt
  • 4 tablespoons 4 tablespoons oat flour
  • Blueberries
  • Lemon zest Add lemon juice for extra flavor if desired.
  • Shredded coconut Toasting before adding enhances flavor.

Method

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Mash 1/2 of a ripe banana in a glass mold until smooth.
  3. Add the large egg and Greek yogurt to the mold and whisk until fully combined.
  4. Gradually mix in the oat flour until no lumps remain.
Baking
  1. Top the batter with chopped dark chocolate for the chocolate-banana cake, fresh raspberries and white chocolate for the raspberry cake, or fold in blueberries, lemon zest, and shredded coconut for the coconut cake.
  2. Bake for approximately 20 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow to cool in the mold for a few minutes before transferring to a wire rack.
