2 cups grated carrots

2 ripe bananas

1 cup Medjool dates

2 eggs

1 1/2 cups almond flour

1/2 cup rolled oats

1 tsp cinnamon

1/2 tsp nutmeg

1 tsp baking powder

1 tsp vanilla extract

1/4 cup melted coconut oil

Pinch of salt


Instructions

1. Soften dates if needed.

2. Blend bananas, dates, eggs, vanilla, and coconut oil.

3. Mix in dry ingredients and carrots.

4. Pour batter into cake pan.

5. Bake until golden.

6. Cool before slicing.

Notes

Freshly grated carrots work best.

Store chilled for maximum moisture.
