  • 3 pieces ripe plantains Choose very ripe plantains that have started to brown.
  • 3 large eggs
  • 1/4 cup milk Substitute with almond or oat milk for a dairy-free version.
  • 1/4 cup vegetable oil or melted coconut oil Choose based on your flavor preference.
  • 1/2 tablespoon salt
  • 1/2 tablespoon baking powder

Method

Preparation
  1. Preheat the Oven: Set your oven to 350°F (180°C) to ensure it’s hot enough when the bread is ready to bake.
  2. Prepare the Plantains: Peel and chop the ripe plantains into smaller pieces for easier blending.
  3. Blend the Ingredients: In a blender, combine the chopped plantains, eggs, milk, oil, salt, and baking powder. Blend until smooth and creamy to create a better texture for your bread.
  4. Prepare the Baking Pan: Grease your baking pan with butter and then line the bottom with parchment paper to prevent sticking.
  5. Pour and Tap: Pour the blended mixture into the prepared pan, gently tapping the pan on the counter to eliminate any air bubbles.
  6. Bake: Place the pan in the preheated oven and bake for about 40 minutes. Check for doneness by inserting a toothpick in the center—it should come out clean.
  7. Cool Down: Once baked, allow the bread to cool in the pan for about 30 minutes, then carefully remove it to a wire rack to cool completely.

Notes

Letting the bread cool fully can enhance the texture. If you prefer a sweeter bread, consider adding a tablespoon of honey or maple syrup to the batter.
