Preparation
- Preheat your oven to 175°C (350°F) and line the baking dish with parchment paper for easy release.
- In a large mixing bowl, whisk the eggs, salt, vanilla extract, and brown sugar together until the mixture is pale and frothy.
- Gradually drizzle in the vegetable oil while continuing to whisk until fully incorporated. Add the orange zest and juice, mixing until combined.
- Sift the flour, baking powder, and cinnamon over the egg mixture in two parts, folding gently with a spatula to prevent overmixing.
- Once you see no streaks of flour, fold in the grated carrots and walnuts until evenly distributed throughout the batter.
- Pour the batter into the prepared baking dish, smoothing it out evenly with a spatula.
Baking
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The top should be a beautiful golden brown.
- Let the cake cool in the pan for about 10 minutes before transferring it onto a wire rack to cool completely. Once cooled, dust with powdered sugar for a lovely finish.
Notes
Ensure your eggs are at room temperature for better mixing. For a thicker cake, use a smaller baking pan. Overmixing can lead to a denser cake; fold ingredients gently until just combined.
