Ingredients

Wet Ingredients
  • 3 large large eggs about 150 g
  • 1 pinch salt
  • 1 teaspoon vanilla extract (5 ml)
  • 150 g brown sugar (3/4 cup)
  • 180 ml vegetable oil (1/2 cup)
  • Zest of 1 orange
  • 60 ml Juice of 1 orange
Dry Ingredients
  • 280 g all-purpose flour (2 1/3 cups)
  • 15 g baking powder (1 tablespoon)
  • 1 teaspoon ground cinnamon
Main Ingredients
  • 300 g grated carrots (about 2 1/4 cups)
  • 60 g chopped walnuts (1/2 cup)

Method

Preparation
  1. Preheat your oven to 175°C (350°F) and line the baking dish with parchment paper for easy release.
  2. In a large mixing bowl, whisk the eggs, salt, vanilla extract, and brown sugar together until the mixture is pale and frothy.
  3. Gradually drizzle in the vegetable oil while continuing to whisk until fully incorporated. Add the orange zest and juice, mixing until combined.
  4. Sift the flour, baking powder, and cinnamon over the egg mixture in two parts, folding gently with a spatula to prevent overmixing.
  5. Once you see no streaks of flour, fold in the grated carrots and walnuts until evenly distributed throughout the batter.
  6. Pour the batter into the prepared baking dish, smoothing it out evenly with a spatula.
Baking
  1. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. The top should be a beautiful golden brown.
  2. Let the cake cool in the pan for about 10 minutes before transferring it onto a wire rack to cool completely. Once cooled, dust with powdered sugar for a lovely finish.

Notes

Ensure your eggs are at room temperature for better mixing. For a thicker cake, use a smaller baking pan. Overmixing can lead to a denser cake; fold ingredients gently until just combined.
