Ingredients

For the Meat Bowls
  • 2.2 lb ground meat (50% beef, 50% pork) Using a mix of beef and pork gives a wonderful balance of flavor and fat. Feel free to substitute turkey or chicken for a leaner version.
  • 1 teaspoon garlic powder
  • 2 teaspoons smoked paprika
  • 1 to 1.5 teaspoons salt
  • Black pepper mix (to taste)
  • 12 to 16 slices bacon Choose a high-quality, thick-cut bacon for extra crunch.
For the Filling & Toppings
  • 1 medium red onion, sliced
  • 1 whole bell pepper (red or orange), diced
  • 15 to 20 cherry tomatoes (or 2 medium tomatoes, chopped)
  • 3 to 5 garlic cloves, sliced
  • 1 to 2 teaspoons Worcestershire sauce (optional)
  • 1 to 2 teaspoons balsamic vinegar (optional)
  • 1 cup (100 g) shredded cheddar cheese
  • 1 cup (100 g) shredded mozzarella cheese Experiment with different types of cheese based on your preference.
For the Salad
  • 6 to 8 Napa cabbage leaves, chopped
  • 2 to 3 celery stalks, chopped
  • 1 whole crisp apple (like Granny Smith), diced
  • Fresh parsley and dill, chopped
  • 1 handful walnuts, toasted
  • 2 to 3 tablespoons olive oil
  • 1 to 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1 to 2 teaspoons whole grain mustard
  • Salt and pepper to taste

Method

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the ground meat, garlic powder, smoked paprika, salt, and black pepper. Mix until the spices are evenly distributed.
  3. Divide the meat mixture into four equal portions. Using a regular glass, mold each portion into a bowl shape.
  4. Wrap each meat bowl with 3 to 4 slices of bacon, tucking the ends underneath.
  5. In a skillet, heat 2 tablespoons of oil and 1 tablespoon of ghee over medium heat. Add the sliced onion, diced bell pepper, cherry tomatoes, sliced garlic, and thyme, sauté for about 5-7 minutes.
  6. Spoon the sautéed vegetable mixture into each meat bowl and top with shredded cheddar and mozzarella cheese.
Baking
  1. Place the meat bowls on a baking sheet and bake for about 25-30 minutes, or until the bacon is crispy and the cheese is melted.
Salad Preparation
  1. While the meat bowls are baking, toss together the chopped Napa cabbage, celery, diced apple, parsley, dill, and toasted walnuts.
  2. In a small bowl, whisk together olive oil, lime juice, honey, whole grain mustard, salt, and pepper to taste.
Serving
  1. Plate the bacon-wrapped meat bowls hot, served alongside the fresh salad drizzled with dressing.

Notes

For added flavor, consider marinating the ground meat with Worcestershire sauce and spices a few hours in advance. Ensure the meat bowls are tightly wrapped in bacon.
