- Remove the outer leaves from the cabbage, cut it into quarters, remove the core, and chop into bite-sized pieces.
Cooking
- In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced onion and sauté for about 3-4 minutes until it starts to soften.
- Stir in the minced garlic, smoked paprika, and ground cumin. Sauté for an additional 1-2 minutes until fragrant.
- Add the chopped cabbage to the skillet. Stir well to combine and season with salt and pepper. Cook for about 10-15 minutes, stirring occasionally, until the cabbage is tender and slightly caramelized.
- Drizzle the apple cider vinegar over the cooked cabbage and stir to combine. Cook for another 2 minutes.
- Transfer the cabbage to a serving platter and sprinkle with chopped parsley. Enjoy warm!
Notes
For added texture, consider adding in some chopped carrots or bell peppers while sautéing the onions. This dish is great as a side, but can also be served over rice or quinoa for a complete meal.
