Lemon Cottage Cheese Scones (High-Protein & Heavenly Soft!)

Ingredients

1 cup cottage cheese

2 cups all-purpose flour

1 tbsp baking powder

¼ tsp salt

¼ cup cold butter

⅓ cup honey

Zest of 1 lemon

2 tbsp lemon juice

1 large egg

1 tsp vanilla extract

1 tbsp cream (for brushing)


Instructions

1. Preheat oven to 400°F and line a baking sheet.

2. Mix flour, baking powder, and salt.

3. Cut in butter until crumbly.

4. Whisk cottage cheese, honey, lemon zest, lemon juice, egg, and vanilla.

5. Combine wet and dry ingredients gently.

6. Shape into 8 wedges, brush with cream, and bake 15–18 minutes.

Notes

Use cold ingredients for fluffiest texture. Add lemon glaze for extra sweetness!
