Fried Potatoes

Ingredients

Potato Preparation
  • 500 g 500 g potatoes (about 1.1 pounds), peeled and cubed
  • 2 large 2 large eggs
  • 100 ml 100 ml milk (about 1/3 cup)
  • 1 tsp Salt, to taste
  • 1 tsp 1 teaspoon paprika powder
  • 0.5 tsp 1/2 teaspoon ground black pepper
Additional Ingredients
  • 100 g 100 g cheese (e.g., cheddar or mozzarella), sliced (about 3.5 oz)
  • 2 tbsp 2 tablespoons (30 ml) olive oil
  • 30 g 30 g butter (about 2 tablespoons)
  • 2 cloves 2 cloves of garlic, minced
  • 1 tbsp 1 tablespoon flour
  • 1 tsp 1 teaspoon Provençal herbs
  • 1 medium 1 medium tomato, sliced
  • 1 1 onion, sliced
  • 4 pieces 4 sausages (about 300 g)
  • 100 g 100 g mushrooms, sliced (about 3.5 oz)

Method

Preparation
  1. Start by peeling and washing the potatoes thoroughly. Cut them into small cubes or slices, aiming for uniform pieces to ensure even cooking.
  2. In a mixing bowl, whisk together the eggs, milk, salt, paprika powder, and ground black pepper until well combined.
  3. Dip the potato cubes into the egg mixture, making sure they are fully coated.
Cooking
  1. In a large frying pan, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Sprinkle flour over the egg-coated potatoes, tossing them gently to coat. Carefully add the potatoes to the pan in a single layer and fry for about 8-10 minutes, turning occasionally, until golden brown and crispy.
  3. Once cooked, sprinkle additional salt, pepper, and Provençal herbs on the potatoes. Remove them from the pan and set aside.
  4. In the same pan, add sliced sausages and mushrooms. Sauté for about 5-7 minutes, or until the sausages are browned and cooked through.
  5. Place the fried potatoes on a serving platter. Top with cooked sausages, sautéed mushrooms, tomato slices, and cheese. Serve hot.

Notes

For a crisper texture, after frying, let the potatoes sit on a wire rack for a minute before serving. If you want a bit of heat, add chili flakes to the egg mixture.
