Ingredients
2 cups rolled oats
1/2 cup chia seeds
1/2 cup ground flaxseed
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon sea salt
3 large eggs
1 cup plain Greek yogurt
2 tablespoons olive oil
2 tablespoons honey or maple syrup (optional)
1/4 cup sunflower seeds (optional)
2 tablespoons pumpkin seeds
Instructions
1. Preheat oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
2. Combine the oats, chia seeds, flaxseed, baking powder, baking soda, and salt.
3. Whisk together the eggs, Greek yogurt, olive oil, and honey.
4. Mix the wet ingredients into the dry ingredients and let the batter rest for 10 minutes.
5. Transfer to the loaf pan, sprinkle with pumpkin seeds, and bake for 45–55 minutes.
6. Cool completely before slicing and serving.
Notes
