Sauté
- Heat a large non-stick skillet over medium heat and sauté the broccoli for about 5-6 minutes until slightly tender. Season with salt and pepper.
Mix Eggs
- In a mixing bowl, whisk together the eggs and sour cream until fully blended, achieving a smooth texture.
Combine
- Pour the egg mixture over the sautéed broccoli in the skillet. Allow it to cook undisturbed for about 2-3 minutes, so the eggs begin to set at the bottom.
- Grate the Suluguni cheese generously over the egg and broccoli mixture.
- Cover the skillet with a lid and let it cook for an additional 3-4 minutes, or until the eggs are cooked through and the cheese is melted.

Notes
