Ingredients

Dough Ingredients
  • 1.5 cups warm water 300 ml
  • 1.5 cups warm milk 300 ml
  • 1 tablespoon dry yeast 10 grams
  • 1 tablespoon granulated sugar 20 grams
  • 7 cups all-purpose flour 840 grams
  • 1 teaspoon salt 8 grams, adjusted to taste
  • 50 grams butter melted
  • 2-3 sprigs parsley chopped, optional

Method

Preparation
  1. In a large mixing bowl, combine warm water, warm milk, dry yeast, and granulated sugar. Let it sit for about 5-10 minutes until foamy.
  2. Add flour and salt to the mixture. Stir until combined, then knead the dough in the bowl or on a lightly floured surface until it is smooth and doesn’t stick to your hands, about 8-10 minutes.
  3. Cover the dough with a clean kitchen towel or plastic wrap and let it rest in a warm area for 40 minutes until it doubles in size.
Cooking
  1. After resting, punch the dough down and divide it into 10 equal pieces. Shape each piece into a ball and gently stretch it into a disc shape without overworking the dough.
  2. Heat your skillet over medium heat. Once hot, place one dough disc in the pan and cook for about 2-3 minutes on each side, until it rises and puffs up, becoming golden brown.
  3. In a separate small bowl, melt the butter. As soon as the bread is cooked, brush each piece liberally with melted butter and sprinkle with chopped parsley, if using.
  4. Serve warm, and enjoy the delightful flavors!

Notes

Ensure your liquids are warm but not too hot; otherwise, they may kill the yeast. A cast iron skillet works amazingly well for cooking, giving it a lovely char. Store leftover bread in an airtight container at room temperature for up to 3 days. If you want to keep it longer, consider freezing it.
