Easy Herb-Garlic Stuffed Tomatoes with Marinade

- Wash the tomatoes under cold running water. Score an X or multiple slits on the top of each tomato, being careful not to cut all the way through.
- Finely chop the parsley, dill, and garlic cloves.
- Gently fill the slits in each tomato with the herb and garlic mixture.
- In a mixing bowl, combine the water, vegetable oil, vinegar, paprika, dried basil, salt, and sugar. Mix until the sugar and salt dissolve.
- Place the stuffed tomatoes in a shallow dish. Pour the marinade over them, ensuring they are well coated.
- Cover the dish with plastic wrap or a lid and refrigerate for at least 5-6 hours, preferably overnight.
Notes
These tomatoes can be served cold as a snack or appetizer. They pair well with grilled meats or fresh salads. Store leftovers in an airtight container in the fridge and enjoy within 2-3 days.
