Easy Herb-Garlic Stuffed Tomatoes with Marinade

Ingredients

Stuffed Tomatoes
  • 8-10 pieces firm tomatoes (e.g., vine tomatoes) Choosing firm tomatoes ensures they hold their shape when being stuffed.
  • 1 bunch fresh parsley Fresh herbs are key for a vibrant taste.

  • 4 cloves garlic
Marinade
  • 500 ml water
  • 50 ml vegetable oil (e.g., sunflower oil) Adds flavor and aids in marination.
  • 50 ml vinegar (e.g., white wine vinegar or apple cider vinegar)
  • 1 tsp sweet paprika powder
  • 1 tsp dried basil
  • 2 tsp salt
  • 2 tsp sugar

Method

Preparation
  1. Wash the tomatoes under cold running water. Score an X or multiple slits on the top of each tomato, being careful not to cut all the way through.
  2. Finely chop the parsley, dill, and garlic cloves.
  3. Gently fill the slits in each tomato with the herb and garlic mixture.
  4. In a mixing bowl, combine the water, vegetable oil, vinegar, paprika, dried basil, salt, and sugar. Mix until the sugar and salt dissolve.
  5. Place the stuffed tomatoes in a shallow dish. Pour the marinade over them, ensuring they are well coated.
  6. Cover the dish with plastic wrap or a lid and refrigerate for at least 5-6 hours, preferably overnight.

Notes

These tomatoes can be served cold as a snack or appetizer. They pair well with grilled meats or fresh salads. Store leftovers in an airtight container in the fridge and enjoy within 2-3 days.
