  • 3 large eggs
  • 2.6 oz red bell pepper, diced
  • 2.6 oz yellow bell pepper, diced
  • 4.2 oz onion, finely chopped
  • 3.5 oz carrot, grated
  • 2 cloves garlic, minced
  • 1.4 oz celery, diced
  • 3.5 oz Greek yogurt For a creamier texture, add an extra tablespoon.
  • 1 tsp sweet paprika powder
  • 1 tsp garlic powder
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • 7 oz pasta (your choice) Any pasta works great!
  • 0.35 oz fresh parsley, chopped (for garnish)

Method

Preparation
  1. Preheat the oven to 360°F (180°C).
  2. In a large skillet over medium heat, add a drizzle of olive oil and optional butter. Add ground beef, breaking it apart with a spatula, and cook for 5-7 minutes until browned, seasoning with salt and pepper.
  3. While beef is cooking, fill a pot with water, add a pinch of salt, and bring to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.
  4. In the same skillet, add more olive oil if needed. Add onion, carrot, celery, and bell peppers, sauté for 8-10 minutes until softened. Add garlic powder, sweet paprika, salt, and black pepper, mixing well.
  5. In a mixing bowl, whisk the eggs with Greek yogurt and season with salt and pepper. Pour this mixture over the vegetable mixture in the skillet, stirring to combine.
  6. Incorporate the drained pasta into the skillet. Top with shredded mozzarella.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and lightly golden.
  8. Sprinkle with chopped parsley before serving.

Notes

For a creamier texture, add an extra tablespoon of Greek yogurt to the egg mixture. Keep an eye on the cheese to prevent over-browning. Ensure that pasta is well-drained to avoid a watery dish.
