Preparation
- Preheat the oven to 360°F (180°C).
- In a large skillet over medium heat, add a drizzle of olive oil and optional butter. Add ground beef, breaking it apart with a spatula, and cook for 5-7 minutes until browned, seasoning with salt and pepper.
- While beef is cooking, fill a pot with water, add a pinch of salt, and bring to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.
- In the same skillet, add more olive oil if needed. Add onion, carrot, celery, and bell peppers, sauté for 8-10 minutes until softened. Add garlic powder, sweet paprika, salt, and black pepper, mixing well.
- In a mixing bowl, whisk the eggs with Greek yogurt and season with salt and pepper. Pour this mixture over the vegetable mixture in the skillet, stirring to combine.
- Incorporate the drained pasta into the skillet. Top with shredded mozzarella.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and lightly golden.
- Sprinkle with chopped parsley before serving.
Notes
For a creamier texture, add an extra tablespoon of Greek yogurt to the egg mixture. Keep an eye on the cheese to prevent over-browning. Ensure that pasta is well-drained to avoid a watery dish.
