Ingredients

Dry Ingredients
  • 2 cups oatmeal Use rolled oats for that perfect texture. Avoid instant oatmeal.
  • 1 teaspoon baking powder
Wet Ingredients
  • 1 cup milk of your choice (dairy or non-dairy)
  • 3 large eggs Can substitute with flax eggs for a vegan version.
  • 1 teaspoon vanilla extract
  • 4 tablespoons stevia or any other sweetener Adjust based on your sweetness preference.
  • 2 tablespoons olive oil
Fruits and Vegetables
  • 1 cup carrot, grated
  • 1 cup apple, grated
  • 9 pieces dried apricots, chopped Can substitute with cranberries or figs.
  • 4 tablespoons raisins

Method

 

Preparation
  1. Preheat your oven to 360°F (180°C).
  2. Rinse the dried apricots and raisins in hot water.
  3. In a large bowl, combine the oatmeal and baking powder.
  4. Grate the carrot and apple, and add them to the bowl with the dry ingredients.
  5. Toss in the rinsed dried apricots and raisins.
  6. In a separate bowl, whisk together the eggs, milk, vanilla extract, stevia, and olive oil until smooth.
  7. Pour the wet mixture into the bowl with the dry ingredients and mix until just combined.
  8. Pour the batter into a greased 7-inch (18 cm) baking dish and spread it evenly.
Baking
  1. Bake for 45-50 minutes until a toothpick inserted into the center comes out clean.
  2. Allow the cake to cool before slicing.

Notes

For added flavor, sprinkle some cinnamon or nutmeg into the dry ingredients. Letting the cake sit overnight in the refrigerator enhances the flavors even more.
