Preparation
- Preheat your oven to 360°F (180°C).
- Rinse the dried apricots and raisins in hot water.
- In a large bowl, combine the oatmeal and baking powder.
- Grate the carrot and apple, and add them to the bowl with the dry ingredients.
- Toss in the rinsed dried apricots and raisins.
- In a separate bowl, whisk together the eggs, milk, vanilla extract, stevia, and olive oil until smooth.
- Pour the wet mixture into the bowl with the dry ingredients and mix until just combined.
- Pour the batter into a greased 7-inch (18 cm) baking dish and spread it evenly.
Baking
- Bake for 45-50 minutes until a toothpick inserted into the center comes out clean.
- Allow the cake to cool before slicing.
Notes
For added flavor, sprinkle some cinnamon or nutmeg into the dry ingredients. Letting the cake sit overnight in the refrigerator enhances the flavors even more.
