Classic Crispy Sweet Potato Fries
- Begin by peeling the sweet potatoes and cutting them into fry shapes—about 1/4 inch (0.6 cm) thick.
- In a large bowl, mix 4 cups (950 ml) of cold water with 1 tablespoon (15 g) of baking soda. Soak the cut sweet potatoes in this mixture for 2 minutes, then thoroughly rinse and pat them dry with a clean towel.
- Prepare another bowl with 4 cups (950 ml) of water mixed with 2 tablespoons (30 g) of salt, and soak the fries for 15 minutes. Use a soft brush (like an old toothbrush) to scrub them gently.
- Preheat your oven to 425°F (220°C). Place a baking sheet in the oven to heat up.
- In a mixing bowl, toss the drenched fries with olive oil until they are evenly coated.
- Carefully remove the hot baking sheet from the oven, then arrange the fries in a single layer on it. Use a spatula to ensure they are not crowded.
- Bake for 25-30 minutes, flipping halfway through, until they are golden brown and crisp.
Sweet Potato Mash with a Twist
- Steam the peeled sweet potatoes in a steamer basket over boiling water for about 20 minutes, or until tender when pierced with a fork.
- Once steamed, transfer the sweet potatoes to a bowl. Use a fork to mash until smooth.
- In a separate bowl, beat the egg with 1 tablespoon (15 g) of butter or olive oil. Combine this mixture into the warm sweet potatoes for a rich, creamy texture.
- Season with salt and blend until fully combined. Garnish with optional fresh herbs before serving.
Air-Fried Sweet Potato Discs
- Slice the sweet potatoes into 1/2-inch (1.3 cm) thick discs. Place them in a bowl and drizzle with olive oil.
- Sprinkle with salt and any optional spices, tossing to evenly coat each disc.
- Preheat your air fryer to 400°F (200°C). Arrange the sweet potato discs in a single layer in the air fryer basket.
- Cook for about 15-20 minutes, flipping halfway through, until they are crisp and golden brown.
Notes
Crispy sweet potatoes are perfect as a side dish alongside grilled chicken or fish, or simply enjoyed with a dollop of your favorite sauce. Store any leftover cooked sweet potatoes in an airtight container in the refrigerator for up to 3 days.
