
Crispy Cheesy Beef Taquitos
Ingredients
- 1 lb (450g) ground beef
- 1 cup cheddar cheese, shredded
- 8 flour tortillas
- 1 tomato, diced
- 1 small onion, diced
- Salt and black pepper
- Cooking spray or 1 tbsp oil

- Guacamole
- Salsa
Step-by-Step Instructions
Cook the Beef
Heat a skillet over medium heat.
Add the ground beef and cook until browned.
Stir in the diced onion and cook for 2–3 minutes until softened.
Season with salt and black pepper.
Mix in the diced tomato and cook for 1 minute.
Prepare the Filling
Remove the beef mixture from heat.
Let it cool slightly.
Stir in half of the shredded cheese.
Fill the Tortillas
Lay the tortillas flat on a clean surface.
Spoon a line of beef filling near one edge.
Roll tightly into taquitos.
Place seam-side down on a baking tray.
Add Cheese
Sprinkle the remaining cheese over the tops of the taquitos.
Lightly spray with cooking spray or brush with a little oil.
Bake
Preheat oven to 400°F (200°C).
Bake for 15–18 minutes until golden brown and crispy.
The cheese should be melted and bubbly.
Serve
Serve hot with guacamole and fresh salsa.
Add lime wedges for extra flavor.
