Creamy Egg Salad Sandwich
Prep Time: 15 minutes
Cook Time: 12 minutes
Cooling Time: 10 minutes
Servings: 4 sandwiches
Ingredients
- 8 large eggs
- ⅓ cup mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- ¼ cup finely chopped celery
- 2 tablespoons chopped green onions
- ¼ teaspoon salt, or to taste
- ¼ teaspoon black pepper
- 8 slices whole-grain bread
- 4–8 green lettuce leaves, washed and thoroughly dried
Instructions
Step 1: Prepare the eggs.
Place the eggs in a saucepan large enough to hold them in a single layer. Pour in enough cold water to cover them by about 1 inch. Starting with cold water allows the eggs to heat gradually. Avoid overcrowding the saucepan, since the eggs need enough space for the water to circulate around them.
Step 2: Cook the eggs.
Bring the water to a full boil over medium-high heat. Once boiling, cover the saucepan and remove it from the heat. Let the eggs stand in the hot water for 10–12 minutes. The whites should be firm and the yolks fully set. Very large eggs may need the longer end of this range.
Step 3: Cool the eggs completely.
While the eggs cook, fill a bowl with cold water and ice. Transfer the cooked eggs into the ice bath using a slotted spoon. Leave them for about 10 minutes, or until completely cool. This stops the cooking process and prevents warm eggs from loosening the mayonnaise dressing when everything is mixed together.
Step 4: Peel and chop.
Gently tap each egg against the countertop, then roll it lightly to crack the shell. Peel carefully, removing any small shell fragments. Pat the eggs dry and chop them into bite-sized pieces. For the chunky filling pictured, leave some larger pieces of egg white rather than finely mincing or completely mashing all the eggs.
Step 5: Prepare the vegetables.
Finely chop the celery and green onions. Smaller pieces distribute evenly throughout the filling and add crunch without overpowering the eggs. Wash the lettuce and dry it thoroughly with a clean kitchen towel or salad spinner. Wet lettuce can quickly soften the bread, so this small preparation step makes a noticeable difference.
Step 6: Mix the creamy dressing.
Combine the mayonnaise, Dijon mustard, lemon juice, salt, and black pepper in a large mixing bowl. Stir until smooth. The mayonnaise provides richness, while mustard and lemon juice add a gentle tang. Begin with the listed seasoning amounts; you can adjust them after adding the eggs and vegetables.
Step 7: Make the egg salad.
Add the chopped eggs, celery, and green onions to the dressing. Fold gently with a spoon or spatula until everything is evenly coated. Avoid vigorous stirring, which can turn the filling into a paste. Taste a small spoonful and adjust the salt or pepper if needed. The finished mixture should be creamy but hold its shape.
Step 8: Chill if desired.
You can assemble the sandwiches immediately, provided the eggs are completely cool. For a colder filling, cover the bowl and refrigerate for 20–30 minutes. This optional chilling time also allows the flavors to blend. Keep the egg salad refrigerated while you prepare any side dishes or arrange your serving plates.
Step 9: Assemble the sandwiches.
Lay four bread slices on a clean surface. Arrange one or two dry lettuce leaves over each slice, keeping them mostly within the bread edges. Divide the egg salad evenly among the four sandwiches. Spread it into a generous, even layer, leaving a small border around the edges to reduce spilling when the sandwiches are handled.
Step 10: Finish and serve.
Place the remaining bread slices over the filling and press down gently. Avoid squeezing firmly, which can push the egg salad out. Serve whole for the generous presentation shown in the photo, or cut in half with a sharp serrated knife. Use a gentle sawing motion to keep the bread and filling neatly in place.
Tips and Recipe Notes
Keep the filling chunky.
A mixture of smaller yolk pieces and larger egg-white pieces creates a satisfying texture. The yolks naturally blend into the dressing, while the whites give the sandwich substance.
Control moisture.
Dry the peeled eggs and chopped vegetables before mixing. If the filling seems loose, chill it before adding more ingredients. Extra mayonnaise can make it softer rather than improve its consistency.
