Apple Ricotta Coffee Cake
Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup whole milk ricotta cheese
1/4 cup milk
2 medium apples, diced
1 teaspoon cinnamon
Instructions
1. Preheat oven to 350°F and prepare a 9-inch cake pan.
2. Whisk together flour, baking powder, salt, and cinnamon.
3. Cream butter and sugar until fluffy.
4. Beat in eggs and vanilla.
5. Mix in ricotta and milk.
6. Fold in the dry ingredients.
7. Gently fold in diced apples.
8. Bake for 45–50 minutes until golden and fully baked.
9. Cool before dusting with powdered sugar and serving.
Notes
Use whole milk ricotta for the best texture.
Honeycrisp or Granny Smith apples work beautifully.
Store covered for up to 5 days in the refrigerator.
Serve with coffee, tea, or whipped cream.
