Ingredients

For the Pastry
  • 500 g puff pastry, thawed Store-bought puff pastry is perfect for this recipe.
  • 2 medium apples, peeled and thinly sliced Choose Granny Smith or Honeycrisp for a great combination of tartness and sweetness.
  • 30 g sugar, plus more for sprinkling
  • 1 teaspoon ground cinnamon
  • 20 g butter, melted
  • 1 large egg
  • 1 tablespoon milk
  • 50 g hazelnuts, chopped
For the Coffee Whipped Cream
  • 300 ml milk
  • 2 teaspoons instant coffee This adds a deep flavor to the whipped cream.
  • 3 tablespoons sugar (for the coffee cream)
  • 3 tablespoons boiling water
For Serving
  • Ice cream Pairs wonderfully with the pastry.

Method

Preparation
  1. Preheat the Oven: Set your oven to 200°C (390°F) and line a baking sheet with parchment paper.
  2. Prepare Puff Pastry: Roll out the puff pastry on a lightly floured surface to about 1/8-inch thickness. Cut it into squares, roughly 10 cm (4 inches) each.
  3. Prepare the Apples: In a bowl, toss the sliced apples with sugar and cinnamon until coated. Set aside to allow the flavors to meld.
Assembly
  1. Brush the melted butter over each pastry square. Sprinkle with a small amount of the cinnamon-sugar mixture.
  2. Lay the spiced apple slices over half of each pastry square, leaving space around the edges. Add some chopped hazelnuts in the center, and sprinkle a bit of sugar over the top.
  3. Fold the other half of the pastry over to create a pocket and press the edges to seal. Use a fork to crimp the edges.
  4. In a small bowl, whisk together the egg yolk and milk. Brush this mixture over the top of the pastry for a golden finish.
Baking and Serving
  1. Place the pastries on the prepared baking sheet and bake for 15-20 minutes, or until puffed and golden brown.
  2. While the pastries are baking, blend the milk with instant coffee and sugar in a bowl. Add boiling water, then whisk until frothy.
  3. Allow the pastries to cool slightly before serving. Top with coffee whipped cream and a scoop of ice cream for an indulgent finish.

Notes

Pro Tips: If your dough gets sticky while rolling, refrigerate it for a few minutes before continuing. For extra flavor, you can add a splash of vanilla extract to the coffee whipped cream. Ensure not to overfill the pastries to prevent leaking while baking. Common mistakes to avoid include skipping the egg wash for a beautiful golden crust.
