Method

Preparation
  1. Rinse the basmati rice in a fine-mesh strainer under cold running water until the water runs clear.
  2. In a medium pot, heat the olive oil or ghee over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until golden and fragrant.
  3. Stir in the salt, ground cumin, coriander, cardamom, and cinnamon. Let them toast with the onions for 1-2 minutes.
Cooking
  1. Add the rinsed rice to the pot and stir to coat each grain with the oil and spices.
  2. Pour in 4 cups of water and add saffron if using, then bring to a boil.
  3. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
Serving
  1. After 15 minutes, remove the pot from heat but keep it covered for another 5-10 minutes.
  2. Fluff the rice gently with a fork and garnish with fresh herbs before serving.

Notes

For added richness, you can incorporate a tablespoon of butter or a sprinkle of toasted nuts just before serving. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
