Ingredients

For the crust
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 4-6 tablespoons cold water Adjust based on dough consistency
For the filling
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cups mixed vegetables (e.g., carrots, peas, bell peppers), chopped
  • 1 cup spinach, chopped
  • 1 teaspoon dried herbs (e.g., thyme, oregano)
  • Salt and pepper to taste
  • 3 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (optional)

Method

Preparation
  1. In a large bowl, combine the flour and salt. Add the chilled butter and mix until the mixture resembles coarse crumbs.
  2. Gradually add cold water, one tablespoon at a time, until the dough comes together. Form it into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
Preheat Oven
  1. Set your oven to 375°F (190°C) while the crust is chilling.
Cook the Filling
  1. Heat the olive oil in a skillet over medium heat.
  2. Add the diced onion and cook until translucent, about 5 minutes.
  3. Stir in the garlic and cook for 1 minute, then add the mixed vegetables.
  4. Sauté until they are tender, about 7-10 minutes.
  5. Stir in the spinach and dried herbs, seasoning with salt and pepper.
Prepare the Custard
  1. In a bowl, whisk together the eggs and milk until well combined. You can stir in cheese at this point if you’re using it.
Assemble the Pie
  1. Roll out the chilled dough on a lightly floured surface to fit your pie dish.
  2. Place the crust into the pie dish, trimming excess dough.
  3. Spread the vegetable mixture evenly in the crust. Pour the egg mixture over the top.
Bake the Pie
  1. Bake in the preheated oven for about 35-40 minutes or until the filling is set and the top is golden brown.
  2. A knife inserted in the center should come out clean.
Cool and Serve
  1. Allow the pie to cool for about 10 minutes before slicing.

Notes

For a richer flavor, try incorporating herbs de Provence or fresh herbs if you have them on hand. Serve warm with a fresh green salad or roasted potatoes.
