No-Bake Chocolate Biscuit Dessert

Ingredients

For the Biscuit Mixture
  • 2 tablespoons butter Melted
  • 1 cup milk Can substitute with almond or oat milk
  • ¼ cup sugar
  • ½ cup cocoa powder Unsweetened
  • ½ cup chopped walnuts Or your choice of nuts
  • 10.5 oz digestive biscuits Or any plain biscuit
For the Chocolate Layer
  • 6.3 oz white chocolate High-quality recommended
  • 1 tablespoon vegetable oil
  •  cup raisins
  •  cup dried cranberries

Method

Preparation
  1. In a medium saucepan over medium heat, melt the butter.
  2. Add milk, sugar, and cocoa powder; stir until well combined and simmer.
  3. Remove from heat and stir in chopped walnuts.
  4. Break the digestive biscuits into small pieces and fold them into the chocolate mixture.
  5. Melt the white chocolate in a double boiler; mix in vegetable oil until smooth.
  6. Stir raisins and dried cranberries into the melted white chocolate.
  7. Combine the white chocolate mixture with the biscuit mixture; fold to combine.
  8. Transfer to a prepared 9-inch square baking dish and smooth the top.
Chilling & Serving
  1. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight until set.
  2. Once set, cut into squares or bars and serve chilled.

Notes

To enhance chocolate flavor, add a teaspoon of vanilla extract. Store in an airtight container in the refrigerator for up to one week, or freeze for three months.
