Eggs
  • 5 large eggs Packed with protein.

Method

Preparation
  1. Begin by washing and chopping the broccoli into bite-sized florets, ensuring they are uniform for even cooking.
Sauté
  1. Heat a large non-stick skillet over medium heat and sauté the broccoli for about 5-6 minutes until slightly tender. Season with salt and pepper.
Mix Eggs
  1. In a mixing bowl, whisk together the eggs and sour cream until fully blended, achieving a smooth texture.
Combine
  1. Pour the egg mixture over the sautéed broccoli in the skillet. Allow it to cook undisturbed for about 2-3 minutes, so the eggs begin to set at the bottom.
  2. Grate the Suluguni cheese generously over the egg and broccoli mixture.
  3. Cover the skillet with a lid and let it cook for an additional 3-4 minutes, or until the eggs are cooked through and the cheese is melted.
Serve
  1. Once done, take it off the heat and let it sit for a minute before serving to allow the flavors to deepen.

Notes

For heat, consider adding crushed red pepper flakes while sautéing. If using frozen broccoli, thaw and drain it well before adding to the skillet to prevent excess moisture. Letting the dish rest after cooking enhances the flavors.
