Fried Potatoes

Preparation
- Start by peeling and washing the potatoes thoroughly. Cut them into small cubes or slices, aiming for uniform pieces to ensure even cooking.
- In a mixing bowl, whisk together the eggs, milk, salt, paprika powder, and ground black pepper until well combined.
- Dip the potato cubes into the egg mixture, making sure they are fully coated.
Cooking
- In a large frying pan, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Sprinkle flour over the egg-coated potatoes, tossing them gently to coat. Carefully add the potatoes to the pan in a single layer and fry for about 8-10 minutes, turning occasionally, until golden brown and crispy.
- Once cooked, sprinkle additional salt, pepper, and Provençal herbs on the potatoes. Remove them from the pan and set aside.
- In the same pan, add sliced sausages and mushrooms. Sauté for about 5-7 minutes, or until the sausages are browned and cooked through.
- Place the fried potatoes on a serving platter. Top with cooked sausages, sautéed mushrooms, tomato slices, and cheese. Serve hot.
Notes
For a crisper texture, after frying, let the potatoes sit on a wire rack for a minute before serving. If you want a bit of heat, add chili flakes to the egg mixture.
