Preparation for Cheesy Herb Puff Pastry Bites
- Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine the cream cheese, minced garlic, feta, mozzarella, parsley, beaten egg, vinegar, chili sauce, ketchup, salt, and black pepper. Mix until well combined and smooth.
- Roll out the puff pastry on a lightly floured surface, then cut it into 4-inch (10 cm) squares.
- Place a spoonful of the cheese mixture in the center of each pastry square.
- Fold the corners of each square to meet in the center, forming a triangle. Pinch the edges to seal tightly.
- Brush each triangle with beaten egg and sprinkle grated parmesan on top.
- Bake for approximately 25 minutes or until golden brown and flaky.

- Preheat the oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
- Sauté chopped spinach in olive oil until wilted; allow to cool slightly.
- In a bowl, mix the feta, ricotta, sautéed spinach, beaten egg, garlic powder, salt, and pepper until well blended.
- Roll out the puff pastry, and cut into 4-inch squares.
- Place a spoonful of the spinach mixture in the center of each square, fold, and seal.
- Brush the tops with the beaten egg for a golden finish.
- Bake for about 20-25 minutes until puffed and golden.
- Serve immediately.
Preparation for Mushroom and Gruyère Pastry Bites
- Preheat your oven to 400°F (200°C) and line a baking tray with parchment paper.
- In a skillet, melt butter over medium heat. Sauté onions until translucent, then add the mushrooms and thyme. Cook until the mushrooms have released their moisture and are tender.
- Remove from heat and stir in the Gruyère cheese. Season with salt and pepper.
