In a separate bowl, whisk the egg and mix it with the grated mozzarella, cottage cheese, and black pepper. Adjust salt if needed.

In the prepared baking dish, drizzle olive oil to coat the bottom. Spread the drained zucchini and carrot mixture evenly in the dish.
