Ingredients

  • 2 zucchini, sliced
  • 300g of cooked and shredded chicken breast
  • 200g of grated mozzarella cheese
  • 50g of grated Parmesan cheese
  • 1 onion, chopped
  • 2 cloves of garlic, chopped
  • 1 teaspoon of dried oregano
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 180°C.
  2. In a frying pan, heat the olive oil and sauté the onion and garlic until golden brown.
  3. Add the shredded chicken, oregano, salt and pepper; cook for a few minutes.
  4. In a baking dish, place a layer of zucchini, followed by the chicken mixture, and cover with a layer of mozzarella cheese.
  5. Repeat the layers until all the ingredients are used up, finishing with Parmesan cheese on top.
  6. Bake for 25-30 minutes or until the cheese is bubbly and golden brown.
  7. Let it cool slightly before serving.
