A traditional and tasty preserve from Mediterranean cuisine, perfect to accompany cold dishes, meats or as an appetizer.
Ingredients
- 1Â kg of red or yellow peppers
- 5 sliced ​​garlic cloves
- 200Â ml of water
- 300Â ml of white wine vinegar
- 2Â bay leaves
- 2Â tablespoons of sugar
- 1Â tablespoon of coarse salt
- Black peppercorns to taste
- Extra virgin olive oil (for covering)
Instructions
- Wash the peppers, remove the seeds and cut them into thick strips or medium-sized pieces.
- In a large pot, mix the vinegar, water, sugar, salt, bay leaf, and black pepper. Bring to a boil.
- Add the peppers and garlic. Cook over medium heat for 5–7 minutes.
- Place the peppers and garlic in sterilized glass jars.
- Cover with the hot marinade and finish with a drizzle of olive oil to seal.
- Let cool to room temperature, cover and store in the refrigerator for at least 24 hours before consuming.
Notes
- Always use sterilized jars to avoid contamination.
- If you prefer a spicy touch, add sliced ​​red chili pepper.
- You can add onion or carrot for more variety.
- Serve with bread, cold cuts, or as a tapa at gatherings.
