- Meat & seasoning
- 1/2 lb 225 g ground beef
- 1 tbsp taco seasoning
- 2 tbsp water
- Base & layers
- 8 small flour tortillas soft taco size
- 1 cup refried beans
- Sauce
- 3/4 cup mild enchilada sauce or canned Mexican-style tomato sauce
- Cheese & toppings
- 1 1/2 cups shredded Mexican-blend cheese
- 1/2 cup diced tomatoes
- 2 green onions thinly sliced
- Optional: sliced black olives sour cream, jalapeños
Instructions

Cook the beef

In a skillet over medium heat, cook the ground beef until browned.

Drain excess fat, then stir in taco seasoning and water. Simmer 2 minutes. Remove from heat.

Crisp the tortillas

Heat a dry skillet over medium.

Lightly toast each tortilla on both sides until golden and lightly crisp. Set aside.

Assemble the base

Spread about 2 tablespoons of refried beans on one tortilla.

Add a thin layer of seasoned beef.

Place a second tortilla on top to form a sandwich.

Spoon about 2–3 tablespoons enchilada sauce over the top tortilla.
