Sugarless Gluten-Free Banana Oatmeal

Ingredients

  Oatmeal Base

  • 2 medium bananas Make sure they are ripe for maximum sweetness.
  • 1 large egg Can substitute with flaxseed meal mixture for a vegan option.
  • 1/3 cup milk of your choice Use non-dairy milk for lactose-free.
  • 1 cup oatmeal Gluten-free oats recommended.
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup walnuts, chopped
  • 1 tablespoon unsweetened cocoa
Serving Toppings
  • Strawberries For serving.

Method

Preparation
  1. Preheat your oven to 360°F (180°C).
  2. In a mixing bowl, mash the 2 medium bananas until smooth.
  3. Add the egg, milk, oatmeal, baking powder, a pinch of salt, ground cinnamon, and chopped walnuts. Mix everything together until well combined.
  4. Pour the mixture into mugs or ramekins.
Baking
  1. Bake in the preheated oven for about 20-25 minutes, until set and slightly golden.
  2. While the oatmeal is baking, mash the remaining 2 bananas in a separate bowl and mix in the unsweetened cocoa.
  3. Once the oatmeal is done, take it out of the oven and top each serving with the banana-cocoa mixture and sliced strawberries before serving.

Notes

This recipe can be enjoyed warm for breakfast or as a snack. Store leftovers in the fridge and reheat in the microwave. For added nutrition, top with nuts or seeds. Can freeze portions for later use.
