Servings:Â 6
Ingredients
- 2½ to 3 pounds beef stew meat or sirloin tips cut into bite-size pieces
- 8 ounces fresh mushrooms sliced (white or cremini work well)
- 1 small yellow onion thinly sliced
- 2 cloves garlic minced
- 1 packet 1 oz onion soup mix
- 1 can 10.5 oz condensed cream of mushroom soup
- 1 cup low-sodium beef broth
- 1 tablespoon Worcestershire sauce
- ½ teaspoon black pepper
- ½ teaspoon dried thyme optional, for extra depth
- 2 tablespoons cornstarch + 2 tablespoons cold water for thickening, optional
Instructions
-
Step 1 – Prepare the beef
-
Pat the beef pieces dry with paper towels. Season lightly with black pepper.
-
Step 2 – Layer the slow cooker
-
Place the beef in the bottom of a 5–6 quart slow cooker. Add sliced mushrooms and onions over the top. Sprinkle in the minced garlic.
-
Step 3 – Mix the sauce
-
In a medium bowl, whisk together the onion soup mix, condensed mushroom soup, beef broth, Worcestershire sauce, and thyme until mostly smooth.
-
Step 4 – Combine
-
Pour the sauce mixture evenly over the beef and vegetables. Do not stir — letting it cook undisturbed helps keep the meat tender.
-
Step 5 – Cook
-
Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until the beef is fork-tender and the flavors have blended beautifully.
-
Step 6 – Thicken (optional)
-
If you prefer a thicker gravy, whisk together cornstarch and cold water to form a slurry. Stir it into the slow cooker during the last 20–30 minutes of cooking and allow it to thicken.
-
Step 7 – Serve
-
Serve hot over mashed potatoes, egg noodles, or fluffy white rice. Spoon extra gravy over the top for maximum comfort food vibes.
