Season the Pork

Pat pork chops dry and season both sides with salt and pepper.

Optional Sear (Recommended)

Heat olive oil in a skillet over medium-high heat.

Sear pork chops for 2–3 minutes per side until lightly golden.

(This adds extra flavor but can be skipped if short on time.)

Make the Sauce

In a bowl, whisk together:

Honey
-
Soy sauce
-
Garlic
-
Ketchup
-
Apple cider vinegar
-
Thyme
-
Red pepper flakes (if using)

Slow Cook
-
Place pork chops in the slow cooker.

Pour the honey garlic sauce over the top.

Cook:

LOW for 4–5 hours, or
-
HIGH for 2–3 hours,

until pork is tender and reaches 145°F (63°C) internally.

Thicken the Sauce (Optional)

If you prefer a thicker glaze:

Mix cornstarch and cold water.
-
Stir into the slow cooker during the last 20–30 minutes.

Let cook until sauce thickens.

Serve

Spoon extra sauce over the pork before serving.

Garnish with chopped parsley or green onions if desired.
