Ingredients
Roast
- 3 lbs 1.4 kg beef chuck roast
- Salt & black pepper to taste
- 2 tbsp olive oil
Onions & Sauce
- 4 large yellow onions thinly sliced
- 3 cloves garlic minced
- 1 tbsp tomato paste
- 2 cups beef broth
- 1 cup dry white wine or extra beef broth if preferred
- 1 tsp fresh thyme or ½ tsp dried thyme
- 1 tsp fresh rosemary or ½ tsp dried rosemary
- 2 bay leaves
- 2 tsp Worcestershire sauce
Optional Garnish
- Fresh parsley chopped
- Caramelized onions from slow cooker
Instructions

Prepare the Roast

Pat the chuck roast dry with paper towels.

Season generously with salt and black pepper.

Heat olive oil in a skillet over medium-high heat.

Sear the roast 2–3 minutes per side until browned.

Prepare the Onions

In the same skillet, sauté onions for 5–6 minutes until slightly softened.

Add garlic and tomato paste, cook 1–2 minutes until fragrant.

Assemble in Slow Cooker

Place the seared roast in the slow cooker.

Pour the onion mixture over the top.

Add beef broth, white wine, thyme, rosemary, bay leaves, and Worcestershire sauce.

Cover and cook on low for 7–8 hours (or high for 4–5 hours) until meat is tender and shreds easily.

Finish & Serve

Remove the roast and let it rest 10 minutes.

Remove bay leaves from the sauce.
