Ingredients

Pork & Veggies

  • 4 bone-in pork chops about 1-inch thick
  • 1 ½ lbs 700g baby potatoes, halved or quartered
  • 1 medium onion thinly sliced
  • 3 cloves garlic minced

Creamy Sauce

  • 1 cup 240ml chicken broth
  • 1 cup 240ml heavy cream
  • 2 tbsp Dijon mustard
  • 1 tsp dried thyme or 1 tbsp fresh
  • 1 tsp paprika

Salt & pepper, to taste

  • 2 tbsp olive oil for searing, optional but recommended
  • 2 tbsp all-purpose flour for thickening, optional

Instructions

  • Optional: Sear the Pork Chops
  • Heat olive oil in a skillet over medium-high heat.
  • Sear pork chops 2–3 minutes per side until golden brown.
  • This step adds flavor but can be skipped if short on time.
  • Layer Ingredients in the Slow Cooker
  • Place potatoes in the bottom of the slow cooker.
  • Top with sliced onions and garlic.
  • Season pork chops with salt, pepper, paprika, and thyme.
  • Place pork chops on top of the potatoes and onions.
  • Make the Creamy Sauce
  • In a bowl, whisk together chicken broth, heavy cream, and Dijon mustard.
  • Pour sauce evenly over the pork chops and potatoes.
  • Cook
  • Cover and cook on low for 4 hours or high for 2 hours.
  • Pork chops should reach 165°F (74°C) and potatoes should be tender.
  • Optional: Thicken the Sauce
