Ingredients

1 lb (450g) ground breakfast sausage

  • mild or spicy, depending on preference

1 (10 oz / 285g) can diced tomatoes with green chilies, undrained

16 oz (450g) processed cheese, cubed

  • Velveeta-style melting cheese works best

Instructions

  • Brown the Sausage
  • In a skillet over medium heat, cook the sausage until fully browned.
  • Break it into small crumbles as it cooks.
  • Drain excess grease.
  • Add to Slow Cooker
  • Transfer cooked sausage to the slow cooker.
  • Add the entire can of diced tomatoes with green chilies (do not drain).
  • Add cubed cheese on top.
  • Slow Cook
  • Cover and cook on LOW for 1½–2 hours, stirring occasionally.
  • Once cheese is fully melted and mixture is smooth, stir well.
  • Serve Warm
  • Switch to WARM setting to keep dip smooth for serving.
  • Stir occasionally to maintain creaminess.
