Savory Oat Flake Omelette with Eggs and Herbs

  • 2 tablespoons Chopped parsley For flavor

Method

Preparation
  1. In a bowl, combine the oat flakes, eggs, salt, pepper, and warm milk. Mix everything well.
  2. Let the mixture rest for about 20 minutes to allow the oat flakes to soak up the liquid.
  3. After resting, stir in the chopped parsley, chili flakes (if using), grated cheese, and a drizzle of olive oil. Mix until smooth.
Cooking
  1. Heat a non-stick pan with a little olive oil over medium-low heat.
  2. Pour the oat mixture into the pan, spreading it out evenly.
  3. Sprinkle the black sesame seeds on top.
  4. Cover the pan with a lid and cook until the bottom is golden brown, about 5-7 minutes.
  5. Flip the omelette carefully and cook the other side until golden and firm.

Notes

Store leftovers in an airtight container in the fridge for up to two days. You can reheat in the microwave or skillet. Feel free to swap the cheese for your favorite variety, or add chopped vegetables like bell peppers or spinach for extra nutrition. Substitute eggs with egg replacers for a vegan version, may change texture slightly.
