Ingredients

  •  lb Italian sausage sweet or mild, links or bulk
  • 2 tablespoons olive oil divided
  • 2 large bell peppers sliced (any colors)
  • 1 large yellow onion sliced
  • 3 cloves garlic minced
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ¼ teaspoon red pepper flakes optional, for heat
  • ¼ cup chicken broth or water for deglazing, optional

Instructions

  • Brown the sausage
  • Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the sausage and cook, turning occasionally, until browned on all sides and mostly cooked through. Transfer sausage to a plate and slice if using links.
  • Sauté the vegetables
  • In the same skillet, add the remaining 1 tablespoon olive oil. Add sliced peppers and onions. Cook for 8–10 minutes, stirring occasionally, until softened and lightly caramelized.
  • Add garlic and seasoning
  • Stir in the garlic, salt, pepper, Italian seasoning, paprika, and red pepper flakes. Cook for 30–60 seconds until fragrant.
  • Combine and finish
  • Return the sausage to the skillet. Add broth (if using) and stir well, scraping up any browned bits from the pan. Reduce heat to medium-low and simmer uncovered for 5–8 minutes, until everything is tender and well coated.
  • Serve hot
  • Taste and adjust seasoning. Serve as-is, over rice, tucked into rolls, or alongside potatoes.
