This Roasted Garlic-Parmesan Cabbage is a simple, oven-baked side dish that turns humble cabbage into something crispy, cheesy, and full of flavor—perfect for an easy weeknight dinner or a healthy comfort food fix.
Ingredients
- 1 medium green cabbage about 900 g / 2 lb
- 3 tablespoons olive oil
- 4 cloves garlic finely minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon smoked paprika optional
- ½ cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley optional, for garnish
- Lemon wedges optional, for serving
Instructions

Preheat the oven to 220°C (425°F). Line a baking sheet with parchment paper.

Prepare the cabbage: Remove outer leaves, cut into thick wedges (keeping the core intact so they hold together).

Season: Place cabbage wedges on the baking sheet. Drizzle with olive oil, then sprinkle with garlic, salt, pepper, and smoked paprika. Gently rub seasoning over both sides.

Roast: Bake for 20 minutes, flipping once halfway, until edges are golden and slightly crisp.

Add Parmesan: Sprinkle Parmesan evenly over the cabbage and return to the oven for 5–10 minutes, until melted and lightly browned.
