Ingredients

Chicken

  • 4 boneless skinless chicken breasts (about 700–800g)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika

Pineapple Sauce

  • 1 cup pineapple chunks fresh or canned, drained
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • ¼ cup brown sugar or honey
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar or rice vinegar
  • 2 cloves garlic minced
  • 1 tsp fresh grated ginger optional
  • 1 tbsp cornstarch + 1 tbsp water for thickening

Optional Garnish

  • Sliced green onions
  • Sesame seeds

Instructions

  • Preheat the Oven
  • Set oven to 375°F (190°C).
  • Lightly grease a baking dish.
  • Season the Chicken
  • Place chicken in the dish.
  • Season with salt, pepper, garlic powder, and paprika.
  • Make the Pineapple Sauce
  • In a bowl, whisk together:
  • Pineapple juice
  • Soy sauce
  • Brown sugar
  • Ketchup
  • Vinegar
  • Garlic
  • Ginger (if using)
  • Add Pineapple
  • Scatter pineapple chunks over the chicken.
  • Pour the sauce evenly on top.
  • Bake
  • Cover loosely with foil and bake for 20 minutes.
  • Remove foil and bake 10–15 minutes more until chicken is cooked through (internal temp 165°F / 74°C).
  • Thicken the Sauce (Optional)
  • Transfer sauce to a small pan.
  • Stir in the cornstarch slurry and simmer 1–2 minutes until thickened.
  • Pour back over chicken.
  • Serve
  • Garnish with green onions or sesame seeds if desired.
  • Serve hot.
