Oven Baked Butter Roasted Potatoes

Ingredients

  • 2 lbs 900g baby potatoes (or Yukon gold), cut into halves or quarters
  • 4 tbsp unsalted butter melted
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried rosemary or 1 tbsp fresh, chopped
  • 1 tsp dried thyme or 1 tbsp fresh, chopped
  • ½ tsp smoked paprika optional, for color and flavor
  • Salt and black pepper to taste
  • Fresh parsley chopped for garnish

Instructions

  • Preheat Oven
  • Preheat oven to 400°F (200°C).
  • Line a large baking sheet with parchment paper or lightly grease with butter.
  • Prepare Potatoes
  • Wash and dry the potatoes thoroughly.
  • Cut them into uniform halves or quarters for even roasting.
  • Season Potatoes
  • In a large bowl, combine melted butter, olive oil, garlic, rosemary, thyme, paprika, salt, and pepper.
  • Toss the potatoes in the mixture until they are evenly coated.
  • Arrange on Baking Sheet
  • Spread the potatoes in a single layer on the baking sheet to ensure crispiness.
  • Roast
  • Bake for 35–40 minutes, tossing halfway through, until golden brown and tender.
  • Check doneness by piercing a potato with a fork — it should slide in easily.
  • Garnish & Serve
  • Remove from oven and sprinkle with fresh parsley.
  • Serve immediately for the crispiest texture.
