Ingredients
- 1 medium sweet potato 8–10 oz / 225–285 g
- 1 –2 teaspoons olive oil or butter optional
- ¼ teaspoon salt or to taste
- ¼ teaspoon black pepper optional
- Optional Toppings choose any:
- Cinnamon
- Brown sugar or honey
- Sour cream or Greek yogurt
- Shredded cheese
- Chopped green onions
Instructions

Wash and scrub the sweet potato well under running water. Pat dry.

Pierce the skin 4–6 times with a fork to allow steam to escape.

Place the sweet potato on a microwave-safe plate.
