Italian Cottage Cheese Pie

Ingredients

For the crust
  • 100 grams Powdered Sugar
  • 125 grams Butter Softened for easier mixing
  • 300 grams Flour
  • 1 teaspoon Baking Powder
  • 2 tablespoons Sour Cream
For the filling
  • 500 grams Cottage Cheese
  • 1 tablespoon Sugar
  • 1 teaspoon Milk For brushing the crust

Method

Preparation of Crust
  1. In a mixing bowl, combine 1 egg, 2 tablespoons of sour cream, 100 grams of powdered sugar, 125 grams of butter, 300 grams of flour, and 1 teaspoon of baking powder. Mix until a dough forms.
  2. Let the dough rest for 20 minutes.
Preparation of Filling
  1. In another bowl, mix 500 grams of cottage cheese, 1 egg, 1 tablespoon of sugar, and 2 tablespoons of sour cream until smooth.
Assembly and Baking
  1. Divide the dough into two portions: one part should be 2/3 of the dough and the other 1/3.
  2. Grease a 17×28 cm baking pan with butter.
  3. Press the larger portion of dough into the bottom of the pan to form a base.
  4. Spread the cottage cheese mixture over the dough base.
  5. Crumble the remaining dough over the top of the cottage cheese mixture.
  6. In a small bowl, mix the egg yolk with 1 teaspoon of milk and brush this mixture over the top crust.
  7. Bake in a preheated oven at 180°C for 40 minutes, or until golden brown.
  8. Once baked, sprinkle some powdered sugar over the pie before serving.

Notes

Allow the pie to cool completely before serving; this helps the filling set. Store leftovers in the refrigerator, covered, for up to three days. For an extra touch of flavor, consider adding a splash of vanilla extract to the cottage cheese mixture. You can fold in a handful of chocolate chips or lemon zest into the cottage cheese filling before spreading it onto the base.
