For the Meatballs:
- 1 lb 450g ground beef (or half beef, half pork)
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 1Â large egg
- 2 cloves garlic minced
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp dried oregano
For the Rice & Sauce:
- 2 cups cooked white rice or brown rice
- 1 tbsp olive oil
- 2 cups broccoli florets optional, steamed
- ½ cup onion diced
- 3 cloves garlic minced
Honey Garlic Sauce:
- ⅓ cup honey
- ⅓ cup soy sauce
- 2 tbsp ketchup
- 1 tbsp rice vinegar or apple cider vinegar
- 1 tsp sesame oil
- 1 tsp cornstarch mixed with 2 tsp water

Preheat Oven

Preheat your oven to 375°F (190°C).

Lightly grease a 9×13-inch baking dish.

Make the Meatballs

In a bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, salt, pepper, oregano.

Roll mixture into 1–1.5 inch meatballs.

Place meatballs on a parchment-lined baking sheet and bake 12–15 minutes until lightly browned (they’ll finish cooking in the casserole).

Prepare Rice & Veggies

Cook rice according to package instructions.

Steam broccoli if using.

In a skillet, heat olive oil and sauté onion and garlic until soft.

Make Honey Garlic Sauce

In a small saucepan, whisk together honey, soy sauce, ketchup, vinegar, sesame oil.
