Preparation
- Preheat the oven to 180°C (360°F).
- In a blender, combine the rolled oats, chopped apples, water, mashed banana, eggs, dried cranberries, baking powder, and cinnamon. Blend until you achieve a smooth batter, about 30 seconds to 1 minute.
- Grease your baking dish with butter or cooking spray.
- Pour the mixture into the greased dish, spreading it evenly with a spatula.
Baking
- Bake in the preheated oven for about 35 to 40 minutes, or until the cake springs back when lightly touched and a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for at least 10 minutes before transferring it to a wire rack.
Notes
Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. For longer storage, slice and freeze individual pieces wrapped in plastic wrap and then foil.
