Ingredients

  • 1 lb 450 g beef sirloin or ribeye, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 tsp fresh thyme leaves or ½ tsp dried thyme
  • Salt to taste
  • Black pepper to taste
  • 1 tbsp fresh parsley chopped (for garnish)

Instructions

  • Prepare the Steak : Pat the steak cubes dry with a paper towel. This helps in getting a nice sear. Season generously with salt and black pepper on all sides.
  • Heat the Pan : Place a large skillet over medium-high heat and add the olive oil. Let it heat until shimmering but not smoking.
  • Cook the Steak Bites : Add the steak cubes in a single layer. Avoid overcrowding the pan; cook in batches if needed. Sear for 2–3 minutes per side until browned. Use tongs to turn them so all sides are nicely seared. Remove steak from the pan and set aside.
  • Make Garlic Butter : Lower the heat to medium. In the same pan, add butter and minced garlic. Stir constantly for 30–60 seconds until fragrant, being careful not to burn the garlic.
  • Combine Steak and Butter : Return the steak bites to the pan. Sprinkle in the thyme and toss everything together, coating the steak in the garlic butter sauce. Cook for an additional 1–2 minutes to heat through.
  • Garnish and Serve : Remove from heat. Sprinkle with chopped fresh parsley and serve immediately. These steak bites are perfect on their own or over mashed potatoes, pasta, or a fresh salad.
