In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until it’s frothy.

In a large bowl, mix flour and salt together. Add the yeast mixture and soft butter. Knead until the dough is smooth.

Let the dough rise in a warm place for about 1 hour, or until it doubles in size.
Baking

Preheat your oven to 350°F (175°C).

Divide the dough into small balls. Flatten each ball in your hand. Add a spoonful of mozzarella cheese in the center and pinch the dough to seal it.

Place the rolls on a baking sheet lined with parchment paper.

In a small bowl, mix the melted butter, minced garlic, and parsley (if using). Brush the garlic butter over the rolls.

Bake for 15-20 minutes or until golden brown. Serve warm.
Notes
Keep leftover rolls in an airtight container at room temperature for up to 2 days. Reheat them briefly in the oven for the best texture.
